Gluten Free menu plan for the week

Well, I've certainly had a long blogging hiatus.  Life has just been full and demanding in a variety of ways - nothing huge, just full.  I do miss writing though and I want to share some of what has been going on and I am looking to find a way to fit blogging back in.  :)

I've been in a cooking rut ... for awhile.  Seems like months.  Winging it.  Lots of repeats.  Mainly just piecing things together here and there.  Well, today I finally sat down and made a plan!  I'm excited.  I thought I would share it in case anyone else is in a rut and would like to just borrow any of these ideas.

These are all gluten free.

Day 1 - Grilled chicken - Used seasonings we had at home
   Grilled cabbage and potato packets
   Cantaloupe, grapes, blueberries

Day 2 - Pork chops with black beans
   Rice
   Broccoli
   Fruit

Day 3 - Potato kielbasa skillet
   Tomato with mozzarella salad
   Salad

Day 4 - Enchilada casserole - can post recipe if anyone wants it.  We use corn tortillas to make it GF.
   Guacomole - I make this almost weekly and it is yummy!
   Chips
   Fruit

Day 5 - Chicken salad
   Broccoli salad
   Fruit

Other options to round out the week include:  breakfast for dinner and tacos.


Breakfast options:
*Applesauce muffins
*Eggs, grits, bacon
*Omelettes
*Yogurt and granola
*Fruit

Lunch options:
*Summer salad (concoction of GF pasta, pepperoni, cheddar cheese, carrots, cucumbers and italian dressing)
*Salads in a jar - I'm excited to try this.  :)  I am hoping it will make eating healthy a bit easier.
*Hot dogs and fries
*Turkey slaw

Snack options
*Carrots and hummus/chips
*Yogurt
*Fruit
*Deviled Eggs
*Smoothies

That's it for now.  Hopefully I will be posting more soon on what is going on around here as well as some of our co-op fun.  :)
